Pumpkin and Leek Ravioli with creamy sauce

Raviolacci di zucca

Recipe suggestion:  for 3 People


  • 2 purple garlic cloves
  • good extra virgin olive oil
  • sea salt
  • cracked black pepper
  • fresh rosemary
  • one large potato
  • 300 gr pumpkin
  • half a savoy cabbage
  • 30 gr of butter
  • 200 ml of fresh cream
  • smoked ricotta.

Simply place a large pot on your stove, fill this up with hot water from your kettle, 3 lt. of water will do for cooking 500 gr of our Ravioli, add salt to it and taste it, you should be able to taste the saltines, if it’s too bland add bit more salt to it.

Cut the potatoes and the pumpkin in very small cubes, thinly slice the savoy cabbage leaves and the garlic, don’t mix the ingredients.

In a large non-stick frying pan with high edges, place a drizzle of oil, add the  potato, pumpkin, rosemary and garlic, place a lit on top of the pan, convenient to is to use a glass lid so you can see  trough, stir time to time.

Cook gently for about 12/15 minutes until potatoes are golden colours, add the cabbage, the butter and the cream, season with salt and crack pepper.

Place you pasta straight from the packet into the boiling water, stir gently in the first minute avoiding any pasta to stick to the bottom of the pot.

Stir time to time until its cooked, usually all our pasta takes 3-4 minutes to cook, drain the pasta and mixed with the sauce, on gentle fire, add the chopped fresh basil and parsley, ready to be served you can grate the smoked ricotta on top, and some cracked black pepper.
